I am hungry.

So I created a cooking thread - how about that?!

DAVE'S FAMOUS TEXMEX CHICKEN (might not be halal)

Ingredients
1 - 1/2 lbs. boned, skinned chicken breast halves
1 cup shredded Colby Jack cheese
1 bag tortilla chips

MARINATE

It's not a terrible idea to marinate the chicken in 2 chopped garlic cloves, 1/2 cup lime juice, and 2 cups vegetable oil overnight.

TEXMEX Dressing

* 1/4 cup sour cream
* 1 tablespoon olive oil
* 1 tablespoon minced white onions
* 1 tablespoon minced fresh cilantro leaves
* 2 teaspoons fresh lime juice
* 1/2 teaspoon minced garlic
* 1/4 teaspoon salt
* 1/4 teaspoon ground black pepper
* Pinch chili powder
* Pinch red pepper flakes

In a blender, combine all the ingredients. Blend until smooth. Adjust the seasoning, to taste, cover, and refrigerate until ready to serve.

After the TexMexyou can prepare the chicken,

When you are ready cook the chicken breast for 8 minutes over an open flame grill - really good idea if you marinated, you can use an oven if you are cool with it being ultra dry. Try to sear it if possible - adds to the texture.

When you are finished grilling, put a generous amount of the TexMex dressing on the chicken breasts and then put the shredded Colby jack cheese on top of that and stick it in the over until the cheese melts.

When you are finished place the chicken on top of a handful of tortilla chips and bam - you're done.

But Dave, is this Halal?

I dunno... I tried reading up on (a pretty interesting sight if you have the time) and it appears that there might be a problem with the sourcream (milk product) so you can probably substitute for 1/3rd-1/2 cup plain Joghurt also I noticed vegetables are a problem.. or at least fresh vegetables so dried spices might still be okay.

It won't be a problem for muslims they can just use halal chicken from their local butchers. All the veg is fine we can eat any fruit and veg as far as i'm aware. The cream is fine too just best to go for one that's suitable for veggies, ensures no added animal ingredients.

So kind of you to look it up on the halal website though Biggrin . I dunno if we can get that brand of cheese in uk..sounds like an american brand, but i guess we can substitute it with something else, with a similar taste.

Uh oh - Well I feel pretty darn confident that mine is better (does the recipe sound different?) a couple years ago I started using Tequila in the marinade but I KNOW that's not halal.

If you don't have colby you can probably get away with a comibation of monterey jack and cheddar (as sharp as possible) - hell might even be better.

I've had genuine Texans tell me I make a great TexMex chicken.

Have you ever made chicken jalfrezi?

If you want, I may remember how to make it. (I made it a couple of times a couple of years ago!)

erm... here goes:

Ingredients:

Boneless chicken. Diced. for this assume about 0.5 kg. (I think! it may be 1 kg. ANyway it should be enough for 4) Make sure the pieces are very small.

Tomatoes. 6 normal sized ones. (I guess in America normal sized is larger than here in the UK...)

Chillies. Depends on your tolerance.

Salt. also 'china salt' if you can find it (its black).

Eggs. 2 should do it.

Go to your supermarket and buy some asian cooking spice mix. I don't know the proportions of things mixed in them, but anything such as uncle bens tikka masala sauce may do. If you can get some asians to give you some mixed spice powders.

(It contains tomato powder, haldi etc...)

Instructions:

Get a pot.

put a small layer of cooking oil at the base. very thin layer.

Slice tomatoes, and add to the pan/pot. on low fire, mix until the tomatoes (or tomaytoes) form a cream with the oil.

Add the chicken. keep stirring, to make sure it does not stick to the base.

Keep stirring for 20-40 mins, until the watre the chicken lets off dries. Just before the end, add the spices (about 2 tablespoons), salt and mix away.

If you want it to look good, boil the eggs, and slice. If you want it to taste good, throw the eggs into the pot (minus the shells!). give it a good mix. Also add chillies to your desired taste.

Add corriander after taking it off fire, if you like corriander that is.

Once cooked, let it cool before eating.

Remember: No onions.

This tastes great over boiled rice....make sure you season to taste

This dish isnt that spicy though...I prefer my Asian food really spicy thats why the chicken Jalfrezi above is my favourite dish...I used to eat it reg when I was in Saudi/Pakistan

u must be a dedicated cook

normally mums just stir for 5-10 min and let it cook on low heat for 20min

every couple of mins give it a good stir. As long as its on low heat its ok.

But its been a year atleast since I last made it...

(and I am very lazy. But where is the effort in stirring?)
